2 Lbs chili meat
1 red bell pepper
1 yellow bell pepper
1 yellow onion
2 T minced garlic
2 T butter
1 cup beef broth
2 cans fire roasted diced tomatoes
1 cup Wickers Mesquite flavored marinade (sub Hickory or Original if Mesquite is in short supply, Mesquite definitely works best)
2 can drained black beans
2 T Wicker’s Rub
2 T chili powder
2 T cumin
Brown meat, then drain off grease. Chop vegetables. Saute vegetables & garlic in butter in a cast iron skillet until onions start to caramelize. While this is going on, add the other ingredients to the crock pot. Add meat and vegetables and mix well.
Cook on high for 4-5 hours
